The World Atlas of Coffee, 3rd Edition

The World Atlas of Coffee, 3rd Edition

The reference, and the reason our own listings can talk about Sidamo naturals and Cerrado pulped naturals and expect anyone to follow.

Hoffmann works origin by origin — the growing regions, the altitudes, the varietals, the processing methods and what each of them actually does to the cup — with maps that make the geography legible rather than decorative. The front of the book covers the parts everyone gets wrong: what roast level really changes, why grind size matters more than almost anything else, and how to taste deliberately instead of agreeably.

It earns its place next to the economics for a reason worth stating plainly. Terroir is the argument that two lots of the same species, grown four hundred metres apart, are different goods commanding different prices — which is imputation running backwards from the cup through the mill to the hillside, exactly as Wieser described it. The Atlas is four hundred pages of evidence that the market is right to price them apart.

The third edition is the current one.
