Marginalism. Carl Menger's 1871 insight that we never value whole categories, only the next unit — which happens to be how a roaster decides when to stop. One more minute in the drum would cost more than it returns, so we stop just past first crack.
Sourced From: Roastify
Tasting Profile
Notes of ripe pear, lemon, and fresh blueberry unfold with floral aromatics. Light body, vibrant acidity, and a clean finish.
Origin & Region
Grown in the highlands of Sidamo, this naturally processed Ethiopian single origin is roasted light to highlight its layered fruit character — an expressive showcase of Ethiopia's distinct terroir. Sidamo is among the oldest coffee-growing land in the world and the genetic home of arabica itself, farmed at elevation by smallholders growing indigenous heirloom varietals.
